Traditional Vietnamese goodness...
Mmm, now some comfort food was all I was craving for and since I haven't been going out for dinners lately, I thought why not try this recipe out?
Here's to a new series I'm starting - the Best & Worst of Pinterest.
With my 2015 goals featuring more DIYs, I thought why not do a series on it? Let's see what Pinterest really has to offer. Sort of inspired by Man vs Pin but a Blog version, yay!
So initially found a recipe on Pinterest and sort of tweaked it a little to make it a little more traditional and flavorful. Here we go!
Ingredients:
6 cups vegetable stock
8 cups water
2 medium onions, peeled and cut in half - char in oven
3 inch fresh ginger - char in oven
250g mock chicken (optional)
3 tbsp sugar
Salt to taste
Some cilantro stems
1 tbsp rice wine vinegar
3 tbsp soy sauce
10 cloves garlic, peeled and crushed
1 tbsp coriander seeds
2 star anise
2 cinnamon sticks
1 tsp ground black pepper
1/3 tsp cumin seeds
5 cloves
1 1/2 tbsp butter
170 grams shiitake mushrooms, stems removed
1 1/2 tbsp hoisin sauce
2 tsp sesame oil
6 green onions, thinly sliced
400 grams rice noodles, prepared according to package instructions
250 grams bean sprouts
2 jalapeno peppers, sliced
Fresh herbs (Cilantro, Thai Basil, etc)
Hoisin and Chilli Garlic Sauce
Lime
Preparation:
First time working with shitake mushrooms or hoisin sauce but I must say, the mushrooms turned out great. Best mushroom dish I've made thus far.
Overall, the pho was a great tasting comfort food. Great for rainy nights.
This is definitely a hit and on the Best of Pinterest side, for sure

Preparation:
- Char onion and ginger in oven under broiler mode, turning them around occasionally. Remove black areas.
- Bring water and stock to boil. Add charred onion and ginger, salt and sugar.
- Add mock chicken (optional)
- Boil for an hour.
- Toast spices on a pan for about 3 minutes. Add into tea infuser and place into boiling stock.
- Prepare the noodles.
- Saute mushrooms with hoisin sauce, sesame oil and butter.
- Strain stock leaving the mock chicken in.
- Assemble the pho in individual bowls.
